I have tried my second season at canning, last year I did Plum Jam, this year I thought I'd venture into more serious canning. I did pears, salsa, and beets. I like all of those, so hopefully they'll get eaten. And hopefully nobody dies of botulism. I don't know how I feel about canning, I'll probably know more next year after we have tried eating our food storage and after I know that nobody has gotten sick from my preserving skills. Is is really worth it to spend an entire day peeling, chopping, and boiling on my feet? I know the Macey's case lot sale is coming up and I could have more easily gone there and bought pears...although mine were canned in only 10% sugar. However, I am excited to see it on my new storage room shelves. (that's a whole other project) Maybe in the next couple of weeks, I'll have them all lined up in their spot.
Having a husband (and his handyman team of brothers led by their master handyman dad) that will build you a cute little storage room is a great way to get motivated to build up your food storage. Basement construction has officially begun, and the storage room is the first on the agenda....I couldn't be more excited. I can't wait to see what it will be like to get carpet, because I love the 2X4's so much already. And yes....that is Josh's dad over here taping on a Wednesday morning with no help except from the littles. He's pretty awesome.

If you like your salsa recipe, I'd love to copy it.:)
I love canning. Something about how it feels so old fashioned. My favorite are peaches, and you've reminded me that I better do some since I just used our last jar from last year.
that's too bad! we'll miss ya at the party. :)
